I really love granola, but I always find shop bought is always SO expensive and contains added sugar. I also find some have been bulked out with cheaper ingredients such as the oats and so you get mainly a bowl of uncooked porridge with a scattering of nuts and raisins. That’s why I like to make my own granola.

Granola is really easy to make and you don’t really need a recipe for it (but I have provided one just in case). You basically add in some oats, then any dried fruit and nuts of your choice! You can add as little or as much of one ingredient as you like.

The secret to creating the perfect granola is to not cook it for too long! I always had this expectation that the granola should stick together in clumps so would keep cooking it until it burnt – but still no clumps! Please do not have this assumption. The granola will not stick in clumps.

 

As soon as your granola goes golden brown on one side, mix it up with a spatula to cook on the other side and then remove from the oven as soon as you see its golden brown on that side. If you think, everything in granola can be eaten raw so this is only to make it soft and for the ingredients to soak in the agave syrup. If you cook it for too long it will burn and burnt granola has a very strong taste, and not in a good way!!

  1. Preheat the oven to 180°C / 350°F / Gas Mark 4.
  2. Combine all the dry ingredients together and mix well.
  3. Add the agave syrup and coconut oil. Stir well, coating all the mixture.
  4. Spread the mixture onto a baking tray covered with baking paper.
  5. Bake in the oven for 30 minutes. Half way through cooking, stir the mixture gently with a spatula to avoid it burning on one side.
  6. Remove from oven after the 30 minutes or when the mixture has turned golden brown.
  7. Remove any burnt bits that might have accumulated, particularly around the edge of the tray.
  8. Store in an air tight container and use within a week.

Serving Suggestions

  • Sprinkle on top of a non-dairy yoghurt such a coconut or soya.
  • Place in a tupperware box to have with you on the go or at work.
