These vegan protein pancakes were so easy to make, I had all the ingredients to hand in my cupboard and they cooked really well!

I’ve tried plenty of recipes where the mixture is either too runny and so the pancake is too thin and tears, or the mixture is too thick so becomes lumpy and doesn’t cook in the middle.

I found this recipe to be just perfect not too thick, not too thin!

Easy Vegan Protein Pancakes
Instructions
  1. Mix all the dry ingredients into a bowl thoroughly.
  2. Allow it to cook on one side for a few minutes before trying to move it.
  3. When it is ready and comes unstuck easily, carefully flip the pancake and cook on the other side for a few minutes.
  4. Once the pancake is cooked on both sides, remove from the wok and cook the next batch.
  5. You may like to store the cooked pancakes in a very low heat oven to keep them warm while you wait for the others to be done.
Recipe Notes

Top with some agave syrup and some fresh strawberries.
