Instructions
  1. Cook 1 cup of quinoa in 3 cups of boiling water, adding the vegetable stock to the water.
  2. Chop and sauté the onion and broccoli with a little water over a medium heat in a pan.
  3. Chop the Brussel sprouts, butternut squash and kale in water until soft. You may need to add the butternut squash first as this has a longer cooking time than the other veg.
  4. Drain and rinse the kidney beans and cook on a low heat according to instructions on the tin.
  5. Once all the ingredients are cooked, drain and mix them together in a large bowl.
  6. Add the dried cranberries, almonds and sunflower seeds to the bowl and mix well.
To make the dressing
  1. In a cup or jug mix the olive oil, lemon juice and agave syrup together until all the ingredients are blended together.
  2. Store in the fridge and freshly pour over your quinoa serving each day.
