The nights are drawing in and the weather is beginning to get cooler. What better way to appreciate the turning of the seasons with this warming bowl of Butternut Squash & carrot soup…

 

This is soup is deliciously creamy from the coconut milk and has a tiny kick from the chilli and added pepper.

I like my soup to be a little bit chunky so I left out some carrot and butternut from the blender and mashed it slightly instead, before adding it to the blended up soup.

Butternut Squash & Carrot Soup
Instructions
  1. Heat the coconut oil in a frying pan on a medium heat.
  2. Add the onion and fry for five minutes.
  3. Next, add in the crushed garlic, chilli, thyme, corriander and cumin and fry for another minute.
  4. Add the carrots and butternut squash to the pan before adding 1.5ltrs of boiling water and coconut milk. Simmer for around 20 minutes of until the veg is soft.
  5. Season with salt and pepper and then add to the blender before whizzing for a few seconds.
  6. For chunky soup: Leave out some cooked carrot and butternut squash from the blender and mash it up to the desired size of chunks. Add this to the final blended mixture.
Recipe Notes

You can serve immediately with chunky bread or allow to cool before adding to an airtight container and storing in the fridge. To save it longer term, freeze the servings you want to save.
